Look out for our new House Butters in the resultan Look out for our new House Butters in the resultant - as tasty as they are beautiful. You might find a bright green (parsley, mint, coriander blitzed up with softened, seasoned butter) disc cosying up next to your sourdough, or a right royal purple one (a reinvigorated beetroot rescued from the chiller and dehydrated). The kitchen keeps them up-to-the-minute seasonal so we can’t predict what’s up next but we’re certain it will be delicious. There’s something special about the still silenc There’s something special about the still silence of the store at the start of the day. 
The light comes through the huge glass windows, drawing your eye out to the surrounding countryside, now clad in its rich, seasonal green. Each of us who opens up has their own 
little routine: switch on the coffee machine, replenish crisps and biscuits, whack up the volume on the music for a quick start-the-day-right sing-song. But what we all have in common is looking forward to welcoming the first customer through the door.

Our menu has an ever-increasing spring-like feel to it. We’re loving this lamb scrumpet: slow-cooked, meltingly tender pulled lamb, pressed, crumbed and briefly deep-fried for perfect crispness. It comes with the new season’s mint sauce made fresh in-house with a full body and a tangy bright flavour, mellowed and sweetened with roast garlic and a touch 
of honey.

In day-to-day practice, this means little change in the garden which has always been grown naturally without the use of chemicals or pesticides. But the Soil Association approval underlines the commitment they have made over decades to grow everything according to the very best guidelines available, ensuring that what they do is good for the long-term sustainable future of the land they farm and the wider ecosystem of which we are all part.⁠

We recently began supporting Key4life, a brilliant We recently began supporting Key4life, a brilliant local charity that is reducing youth offending by helping young men in prison or 'at risk' find brighter futures. 
One of their most recent cohort spent 3 days with us on work experience, you can follow his journey in last night's Channel 4 documentary 'A very British Job Agency' (link in bio). 
Huge congrats to Connor for since finding a permanent role close to home, it was only a matter of time before that smile worked its magic!

Each year, we are surprised by how long it takes for leaves to unfurl on trees. You’d think they’d come in late March, along with those first warm days when tulips start to pop open and you can sit still for a time outside, eyes closed and face pointing to the sun. But they don’t. Neither do they arrive for Easter: those eggs have to be tucked into evergreen hedges and magnolia blossom cups for a hunt. But the first, pale, lime-coloured leaves are worth the wait. Tiny and fragile, they bring so much promise with them. Soon our world will be green again, for long enough to sustain us through the next grey and muddy winter. We watch and wait and wonder.⁠

Handmade, small-batch, real food from Italy, everything they do tastes as it comes straight from a nana’s kitchen. So it’s their Colomba cake, traditionally baked at Easter in Italy, you may want to sit down with over a cuppa. It’s a light, naturally leavened (ie sourdough), vanilla cake studded with candied orange peel, sweetened with honey and glazed with almonds and nuts, and shaped like a dove, for peace. The irrepressible Tony is fighting slavery in chocolate production with mini eggs in their trademark, brightly coloured packaging, and joyful egg boxes filled with a rainbow-clad array. Montezumas have got witty with Plucky and Clucky Choc Kicks and Three Chicklaters (stop! Enough cuteness already!). Easter might mean lamb 🐑 - but it doesn’t have to be traditional. Don’t get us wrong, we love a classic roast and there are few scenes that evoke an Easter celebration more than a beautiful leg of lamb on a laden table.  But if you fancy something different this year, Nathan in the butchery is really up for getting involved. He could butterfly a leg for you, for the barbecue, to serve with a fragrant salsa verde (see below for recipe), or you could go for more or a slow-roast shwarma style shoulder, meltingly tender and juicy and perfect to stuff into flatbread with houmous and pickles (Bottlebrush ferments in the chiller would be a great option to cut through the richness of the meat, here).⁠

Whatever you go for, it will come from Bagnell Farm, which supplies us with the highest quality Jacob sheep, lovingly reared on local hills and butchered to order, so please get your order in as soon as possible.⁠

Tin of anchovies in oil⁠
1 tbs red wine vinegar⁠
1 garlic clove, minced⁠
1 tsp dijon mustard⁠
2 tbsp capers⁠
3 tbsp extra virgin oil⁠
1 lemon (optional)⁠
⁠
Pulse everything together apart from the oil in a processor till you have a roughly textured paste. Loosen with the oil until you have a soft, spoonable consistency. Taste and adjust for seasoning or piquancy - you may like to add a squeeze of lemon juice to add tartness. ⁠

There are few occasions at home where you think of having a starter. But to us, the arrival of local asparagus is one. While you can get hold of it now at most times of the year, flown in from somewhere in the world, it bears little resemblance in flavour or texture to the vegetable of immense beauty and delicate flavour that it is when in season locally. Nothing quite matches the silky tenderness of an asparagus stalk, recently cut, steamed and drenched in top-notch butter. It’s the only way to truly honour it. (By the way, try the Hollismead organic salted butter in the chiller – they’re a bit more than your normal pat, so save them for moments when they can star. But when that moment comes, pooling over asparagus, you’ll know it. It’s now.)⁠
